ROYAL ICING RECIPE (This recipe can decorate a 20cm round cake or approx. 12 cookies) : • 500g Icing Sugar • 2 med egg whites (or 2tsps egg white powder + 4tbsps water • 1tsp lemon Juice (Adjustments to be made acording to consistency requirements – see bel0w) • Beat with an electric mixer for 4-5mins untill smooth and shiny CONSISTENCIES OF ROYAL ICING: Stiff Peak: This peak is reached when icing is firm enough that it will not drip off a spoon. Stiff peak is used for piping very small detail.   Soft Peak To get soft peak royal icing just add a few drops of water until more pliable; but not runny. This peak is used for outlining and piping boarders.   Runny Add drop by drop of water until icing is runny. Runny icing is used for the flooding...

CONSISTENCIES OF ROYAL ICING:
